Chilli Chicken Gravy- மிளகாய் கோழி மசியம்
Ingredients:
- Chicken 1kg
- Green chillies 10
- Red chilli powder 1/2 tsp
- White Pepper powder 1/4 tsp
- Black pepper powder 1/4 tsp
- Curd [Yogurt] 1/2 cup
- Turmeric powder 1/4 tsp
- Soy Sauce 2 tsp
- Corn Flour 2tsp
- Ginger 1/2 inch
- Garlic 4 cloves
- Onion 1
- Tomato 1
- Salt to taste
- Oil
Method:
- Clean and cut the chicken into equal medium pieces.
- Chop the onion,tomato,ginger and garlic and make a fine paste.
- Slit the green chillies.
- Mix red chilli powder,salt,turmeric powder,curd,1 tsp soy sauce,1tsp corn flour and 1 tbs oil.mix all these ingredients and finally add the chicken and marinate for 1/2 hour.
- After half an hour now add the onion,tomato paste and marinate the chicken for another 1/2 hour.
- Heat the Kadai with 1 tbs of oil.when the oil is hot add the slit green chillies,white pepper powder,black pepper powder and fry for 30 sec.
- Add the marinated chicken and let it cook until the chicken is 80% cooked.
- Mix the rest of the corn flour and soy sauce with little water and add it to the chicken.If required add 1/2 cup of water and let it to cook until the chicken is fully cooked.
Garnish the chicken with Fried Green chillies and finely chopped coriander leaves.

Tapioca Vada - ஜவ்வரிசி வடை

- Sabudana (Tapioca) 1 cup
- Potato 1 Medium
- Onion 1
- Green chillies 3
- Curry Leaves
- Salt to taste
- Cumin powder 1/2 tsp
- Chilli powder 1/2 tsp
- Rice flour 2 tbs
- Oil to fry
Method:
- Soak the sabudana for minimum 3-4 hrs
- Finely chop the onion,green chillies and curry leaves.
- Boil and mash the potato and keep aside.
- Drain the water from sabudana and make sure the is no water and add the chopped ingredients and mix well.
- Add the mashed potato.The reason for adding mashed potato is to bind all the ingredients together.
- Now add all the other powder ingredients and mix well.If you like spice then u can add another 1/2 tsp of chilli powder.
- The reason for adding the rice flour is to bind the mixture and for the crispiness.
- Mix well and make them into small even sized balls and flat them in your hand like patties and deep fry in oil.
Yummy and crispy Sabudana (Tapioca) Vada is ready to serve.

Onion Rings - வெங்காய சுருள் பஜ்ஜி

- All purpose flour 1cup
- Onion large 3
- Corn starch 2tbs
- Baking soda 1tsp
- Salt to taste
- Chilli powder 1tsp
- Instant Mashed potato 2 tbs
- Bread crumbs 1/2 cup
- Oil to fry
Method:
- Peel the skin of the onion and cut then into 1 inch thick rings and keep them aside.
- Take a bowl and mix all the ingredients except onion.
- Add 1/2 cup of water little by little and mix well and make sure the batter is not to thick or too loose.
- Take the onion rings and dip them in the flour batter
- And dip them in the bred crumbs and set aside
- Heat the oil in the kadai and deep fry the onions
Yummy crispy Onion Rings is ready to eat.

Garlic Curry -பூண்டு குழம்பு
Ingredients:
- Garlic 15cloves
- Gingerly oil 2tbs
- Onion 1 large
- Tamarind paste 3tbs
- Coriander Seeds 2tbs
- Red chilli 5-6
- Cumin seeds 1tbs
- Whole pepper 1tsp
Asafoetida powder 1tsp
Turmeric powder 1tsp
Salt to taste
- Mustard seeds 1tsp
- Cumin seeds 1 tsp
- Fennel seeds 1tsp
- Curry leaves
Method:
- Finely chop the onions.
- Heat the kadai and fry the coriander,red chilli, cumin seeds and whole pepper.
- Remove the fried ingredients from the kadai and let it cool for few minutes and blended it into fine powder.
- Add the oil and when its hot add all the seasoning ingredients.
- Once the seasoning splitters, add the garlic and fry for a minute and then add the Asafoetida powder.
- Add the onions and fry till it becomes soft.Add salt and turmeric powder.
- Now add the masala powder and fry for few minutes on medium flame.[do not burn the masala powder]
- Dilute the tamarind paste with 1/2 cup of water and add it to the onion mixture.
- Add 1 cup of water and let it cook for 8-10 mins.[If required u can add some more water]
- Once the oil collects on top,switch off the flame.
- Yummy Garlic Kuzhlambu is ready to serve with hot rice.
